15 Minute Chili

Ingredients
  • 1 pound ground turkey
  • 1 Tb olive oil
  • 1 onion, chopped
  • 2 cloves minced garlic or 1 tsp garlic powder
  • 1 Tb chili powder
  • 1 Tb cumin powder
  • 1-2 16 oz. can kidney beans, rinsed (depending on how bean-y you want it)
  • 2 15 oz. can stewed tomatoes, chopped
  • 1/2 cup salsa

Directions
1. In a large pot, heat olive oil and brown turkey over medium-high heat. Stir infrequently to let meat darken (mmmm, flavor!). Add garlic, chopped onion chili powder and cumin and cook for another minute or so.



2. Add beans, tomatoes, and salsa to turkey mixture. Cook until hot. Let cook down until desired thickness. You an also mash up some of the beans to thicken it.



3. Serve with cornbread, cooked pasta, cooked rice, or on top of a baked potato. Sprinkle with cheese if desired.


Notes from Jill's Kitchen: This took a smidge longer than 15 minutes to make, but all in all it was quite speedy and delicious! A few things- I added the chili powder and cumin to the meat and onions before the tomatoes to flavor the meat. Oh, and I used beef because it's what I had in the freezer. I also mushed up plenty of the beans and added them back in to thicken it up and let it simmer for quite a while and it really did turn out to be one of the best batches of chili I've ever made. True story.

Update 4/18: I tweaked the recipe to reflect the changes I have slowly made over the years. I made a PHENOMENAL batch of this last night and I am trying to write down what I did to try and recreate it next time I make this!
