Cilantro Lime Brown Rice

Ingredients
  • ½ tablespoon butter
  • 1 cup brown rice
  • 1¾ cups chicken broth
  • 1/2 lime (zest and juice)
  • ¼ cup chopped cilantro
  • ½ teaspoon salt
Instructions
  1. Melt butter over medium heat in medium-sized pot.
  2. Add rice and the zest of one lime; toast, stirring occasionally, for 3-5 minutes.
  3. Add liquid, stir, bring to a boil, cover, and turn heat down to low.
  4. Simmer for approximately 35 minutes or until rice has absorbed all the liquid.
  5. Stir in lime juice and chopped cilantro.

Notes from Jill's Kitchen: I made this once before and it was way too lime-y, which is surprising because I usually love lime. This time I cut the lime zest and juice in half and it was perfect.
