Ingredients
- ½ tablespoon butter
- 1 cup brown rice
- 1¾ cups chicken broth
- 1/2 lime (zest and juice)
- ¼ cup chopped cilantro
- ½ teaspoon salt
Instructions
- Melt butter over medium heat in medium-sized pot.
- Add rice and the zest of one lime; toast, stirring occasionally, for 3-5 minutes.
- Add liquid, stir, bring to a boil, cover, and turn heat down to low.
- Simmer for approximately 35 minutes or until rice has absorbed all the liquid.
- Stir in lime juice and chopped cilantro.
Notes from Jill's Kitchen: I made this once before and it was way too lime-y, which is surprising because I usually love lime. This time I cut the lime zest and juice in half and it was perfect.
