Ingredients
- 2 lb. boneless skinless chicken breasts, cut into cubes;
- 5 sweet potatoes, cut into 1/2-inch cubes;
- 1 tbsp. paprika;
- 2 tbsp. garlic powder;
- 6 tbsp. hot sauce, bbq sauce or a combination of the two;
- ½ cup olive oil or melted ghee;
- 1 cup bacon, cooked and cut into pieces;
- 1 cup green onions, sliced;
- Sea salt and freshly ground black pepper to taste;
Preparation
- Preheat your oven to 400 F.
- In a large bowl, combine together the olive oil, paprika, garlic powder, hot sauce, and season with salt and pepper to taste.
- Add the sweet potatoes and chicken, and stir to coat.
- Empty the bowl into a casserole dish.
- Bake in the pre-heated oven for 40 to 45 minutes, stirring every 10-15 minutes.
- Add the green onions and bacon to the dish and place back in the oven for another 5 minutes to let all the flavors combine.
Notes from Jill's Kitchen: I was originally going to try the full buffalo hot sauce version, but it turns out that we no longer have the bottle of hot sauce I thought we did in the fridge. Luckily, I have like three bottles of bbq sauce in there, so dinner was saved! This was surprisingly delicious, but way way too oily. Part of that came from me using too much bacon (I halved the recipe, but used like 1/2 a package of bacon since that is what I had in the fridge and I didn't want it to go to waste), but partly I think it just called for way too much olive oil. I did the full 1/4 cup that the 1/2ed recipe called for, but next time I'll just try a couple tablespoons and see how it goes! Also, hot sauce next time. Wish me luck!
Update 10/16
I added diced onions this time (kind of by accident!) and I liked the addition. I baked it with tinfoil for the first half this time and that was a bad idea. The liquid never cooked off and it was soupy. I cooked it too long, trying to get the liquid to evaporate and the chicken was dry. Fail! I did add buffalo sauce this time and it was good!
