Ingredients
- 3 medium zucchini
- 1ish tablespoon olive oil
- 1/2 cup chopped onion
- 3 cloves garlic, minced
- 1 pound ground turkey italian sausage
- 1 can diced tomatoes
- 1 tablespoons dried basil
- 1/4ish cup parmesan cheese
- salt
- pepper
Method
1 Cut zucchini in half lengthwise. Scoop out insides, leaving shells about 1/4 inch thick. Chop up about half of the insides and set aside.
2 Heat 1 Tbsp of olive oil in a skillet on medium high heat. Sauté onion and garlic until soft. Add reserved zucchini insides, and sauté another 2 minutes.
3 In a separate skillet heat a Tbsp of olive oil on medium high heat. Add the sausage. Lightly brown the turkey, stirring only occasionally. After the turkey browns on one side, stir it so that it has a chance to brown on other sides. Cook until the ground turkey is lightly browned, about 6 minutes. Stir in the onion mixture from the other pan. Stir in tomato and basil and cook 1 minute longer. Remove mixture from heat and set it aside.
4 Place zucchini shells in a baking dish, sprinkle with salt and pepper and then fill with mixture. Bake at 375 degrees for 30 minutes, until zucchini is soft. Serve while hot.
Notes from Jill's Kitchen: I changed this one quite a bit, first because I misread the recipe and bought several wrong ingredients and second because by the time it got to the step of adding the egg and such I was tired and hungry and wanted to get it done already. So I skipped all that. It still turned out delicious, so Jill wins this round. I still want to try the actual recipe sometime, though, so here it is-
