Chicken and Broccoli with a hint of lemon

From Me! I have been very into coming up with my own concoctions lately and Sam was so in love with this one that I figured I should probably document it.

Ingredients:

1-3 chicken breasts, diced (I used frozen pre-cooked chicken)
1 head of broccoli, cut into florets
1-2 teaspoons minced garlic
1 ish cups chicken broth
1 Lemon, juiced
Olive oil
Cooked rice

Method:
~Heat olive oil in skillet, brown garlic once it is rippling and then add broccoli. Cook for a few minutes, until they are bright green and brown on the edges

~Put broccoli to the side and cook the chicken in the same skillet. Try and get it nice and brown (which is my nemesis when it comes to cooking...). Pour in chicken broth and lemon juice and scrape up browned bits from bottom of the skillet. Let simmer until the liquid is almost gone. Add broccoli back in and cook until broccoli is softened.

~Serve over rice. This time I cooked the rice in chicken broth instead of water and it probably wasn't exactly necessary. Next time I'll do it with brown rice.
