Grilled apple stuffed pork chops

From me!

4 thick pork chops
4 slices bacon, diced
1 cup cooked rice
1 apple, diced (I used golden delicious this time, because that is the apple Duncan insisted on getting, but next time I want to try Granny Smith)
1 celery stalk, diced
1/2 onion, diced
1/2 tsp dried thyme
1/4 tsp ground sage
Salt
Pepper

1. Cut a pocket in each pork chop as big as you can.
2. Salt and pepper both sides of the pork chops. Cover and let them sit while you prepare the filling.
3. Cook bacon until crispy. Put on a paper towel lined plate to drain. Clean most of the bacon grease out of the pan.
4. Cook apple, onion and celery, thyme and sage in hot bacon grease until soft and slightly browned. Remove from heat.
5. Stir bacon into the apple mixture.
6. Stuff the pork chops, close the opening with a toothpick (or, you know, a broken off skewer because you realize you ran out of toothpicks).
7. Mix whatever stuffing you have left into the rice; use it as a side dish.
8. Grill pork chops until cooked through.
