Turkey and Rice soup

From me!

1 large onion, diced
1 cup diced carrots
4ish stalks celery, diced
2-4 cloves garlic, minced
1 tsp thyme
4ish cups turkey stock
2 cups water
1 cup uncooked rice
1-2 cups cooked turkey (or a rotisserie chicken, if you ate all your leftover turkey before getting a chance to make soup out of the stock!)
salt and pepper

Cook onion, carrots, celery and garlic in a little bit of butter or olive oil in a large pot. Season with salt pepper and thyme. Cook until softish

Add turkey stock and water and bring to a boil. Turn heat down, add rice and cook until rice is done (20-30 min?)

Add turkey/chicken and cook until the meat it heated through. Add more turkey stock, chicken broth or water if the rice soaks up too much liquid.

Notes from Jill's Kitchen: this is my go-to use up the leftover turkey from Thanksgiving meal. I get especially puffed up about it since I make the stock out of the turkey carcass when we are done devouring it on Thanksgiving. Go me! And thanks to the fellow grad student who taught me how to make stock out of turkey carcasses the first time
