Ingredients
2 tart apples, peeled and thinly sliced
1 T lemon juice
1/4 t cinnamon
3 t olive oil
Salt, pepper and thyme
3 chicken breasts
1 sweet onion, thinly sliced
1 c chicken broth
1 t lemon zest
Prep
Toss apple slices with lemon juice and cinnamon. Heat 1 t oil and 1 t butter. Add apples and cook, stirring occasionally until tender (about 5 min). Remove from pan
Remove tender from chicken breasts and cut the rest into thin pieces (I usually cut them into about 3 pieces). Season on both sides with salt pepper and thyme.
Heat 1 t oil and 1 t butter over high heat. Cook half the chicken until golden brown and cooked through, about 2-3 min per side. Repeat with other half of chicken. Keep warm.
Cook onion until slightly browned. Add chicken broth and lemon zest to deglaze the pan; scrape up any browned bits. Let reduce slightly. Add chicken back and toss to coat with sauce. Top with apples and enjoy!
Notes from Jill's Kitchen: This was amazingly delicious. I made mashed potatoes with it and they were the perfect side. Yay for fall flavors!
