Baked Chicken Nuggets

From me!

1c buttermilk or buttermilk substitute
2 chx breast or 3 boneless skinless chx thighs, cut into bite-sized pieces
1/2 cup grated parmesan
1c panko or regular bread crumbs
salt and pepper

Pour buttermilk over chicken pieces. Let sit for however long you have til they need to cook.

When ready, preheat oven to 400*. Line large baking sheet with foil, place a well-greased wire cooling rack over foil.

Mix parmesan, bread crumbs and salt and pepper in a bowl. Take each chx piece out of milk, coat in crumbs, then place on wire rack. Repeat.

Bake at 400* for 25-ish min. May take less time for chx breasts.
