Ham and Cheese Muffins

Ingredients (11)
  • 2 cups flour
    2 tsp baking powder
    1 tsp salt
    1/2 tsp baking soda
    1/2 tsp ground paprika
    5 T butter, softened
    1 ham steak, diced
    1 cup shredded cheddar
    1/2 cup finely grated parmesan
    1  Egg
    1 cup (250ml) milk


    • Step 1
      Preheat oven to 200°C. Line a 12-hole, ⅓-cup (80ml) muffin pan with paper cases. Combine the  flour, baking soda, baking powder, salt and  ground paprika in a large bowl. Use your fingertips to rub the butter, softened into the flour mixture until the mixture resembles fine breadcrumbs. Stir in the diced ham, cheddar, and grated parmesan.
    • Step 2
      Whisk the  Egg and milk in a jug. Make a well in the centre of the flour mixture. Pour in the egg mixture and stir until just combined. Spoon the mixture evenly into the paper cases.
    • Step 3
      Bake for 20-25 mins or until a skewer inserted in the centre comes out clean. Turn onto a wire rack to cool completely.
