- 2 cups flour2 tsp baking powder1 tsp salt1/2 tsp baking soda1/2 tsp ground paprika5 T butter, softened1 ham steak, diced1 cup shredded cheddar1/2 cup finely grated parmesan1 Egg1 cup (250ml) milk
- Step 1Preheat oven to 200°C. Line a 12-hole, ⅓-cup (80ml) muffin pan with paper cases. Combine the flour, baking soda, baking powder, salt and ground paprika in a large bowl. Use your fingertips to rub the butter, softened into the flour mixture until the mixture resembles fine breadcrumbs. Stir in the diced ham, cheddar, and grated parmesan.
- Step 2Whisk the Egg and milk in a jug. Make a well in the centre of the flour mixture. Pour in the egg mixture and stir until just combined. Spoon the mixture evenly into the paper cases.
- Step 3Bake for 20-25 mins or until a skewer inserted in the centre comes out clean. Turn onto a wire rack to cool completely.
