From A Bountiful Kitchen...I think?
1 cup butter, softened
1 cup brown sugar
1/2 granulated sugar
2 eggs
1 T vanilla
2 C all-purpose flour
1 C old fashioned oats
1 t baking powder
1 t baking soda
1 t salt
3 cups chocolate chips
Directions:
1. Preheat oven to 375.
2. Cut butter into chunks and place in bowl of standing mixer.
3. Mix butter and sugars until smooth.
4. Add eggs, one at a time, and vanilla.
5. Add all remaining ingredients, including chocolate chips, and mix until dry ingredients are incorporated.
6. Scoop onto cookie sheets and bake for 8-9 minutes, or until golden brown.
Notes from Jill's Kitchen: Sam's sister Becky shared this on their family FB page and I made it one day, not noticing the recipe had oats in it. The result were cookies so like our favorite Potbelly's cookies that it was like I was sitting downtown on a lunch break, many moons ago. Sigh. Those were the days... Well, I may not be a modern working woman any more, but at least now I can make these cookies whenever I want, so that's something :)
