· 12 cups roughly chopped
tomatoes
· 1 sweet onion, cut into
large chunks
· 2 tablespoons extra
virgin olive oil
· 1/2 teaspoon Kosher salt
· 1/4 teaspoon freshly
ground black pepper
· 1/4 cup packed fresh
basil leaves
Preheat
the oven to 375°F.
Combine
the tomatoes and onion in a large roasting pan or on a rimmed baking
sheet. Drizzle with olive oil and season with salt and pepper.
Roast the tomatoes and onion in the oven for about 1 1/2 hours.
Let
the mixture cool slightly. Then, transfer the roasted tomatoes and
onion to a blender. Add the basil and puree until smooth. Adjust
seasonings and serve as desired.

Notes from Jill's Kitchen: I actually remember Aimee telling me that she does this with her plethora of home-grown tomatoes, but I didn't try it for myself until I found this "recipe" online. Once again, it's not so much a recipe as a how-to, but delicious none the less!
