Roasted potatoes and smoked sausage

Ingredients
  • 1 (16 oz) pkg turkey smoked sausage, sliced into rounds
  • 1 onion cut in 1-2" pieces
  • 6 red potatoes diced into 1 inch cubes
  • 2 or so Tbsp olive oil
  • 1 tsp or so sweet paprika
  • 2 tsp or so thyme
  • salt
  • pepper
Instructions
  1. Preheat oven to 400 degrees.
  2. Line a large baking sheet with foil.
  3. In a large bowl, add the smoked sausage, onion and potatoes. Drizzle with olive oil and toss to coat. You just want it all to have a light coating. Use more oil if needed.
  4. Then season with the paprika, thyme, salt, and pepper. Toss to evenly distribute the seasonings. You can add more at this point if you think you needed it.
  5. Pour out onto the foil line baking sheet. Bake at 400 degrees and bake for 45 minutes, stirring every 15 minutes.
  6. Remove and turn off oven. Serves 5-6

Notes from Jill's Kitchen: I omitted the cheddar cheese that the original recipe had in it and it was a good choice. I feel like if the recipe includes cheese sprinkled on top, it is pretty much pointless. Unless you are talking about lasagna, because in that it's like the more cheese the better. And I don't even like cheese!
